I noticed that most high schools that keep their stats on Maxpreps keep track of dig errors but why do colleges not? There is not even a spot for it on the electronic stats. I feel as if it might change the decision for Defensive player of week honors in some cases if the libero had 17 digs but 10 dig errors. Just curious why setting errors (BHE), hitting errors, block errors and reception errors are tracked but not dig errors.

Because there is no such thing as a dig error.
But in high school you have kids and parents keeping "official" stats, so they can make up what ever they like

Dig error is an option when using different coaching stat programs like istat. Personally, I will indicate a "dig error" when I am using istat to indicate one of my players shanking a dig that rewards the other team with a point. But that is because I am not keeping stats on the other team and rewarding the player with a kill.
In college when doing stats for both teams you don't have "dig error" on the box score because instead of tracking the error you track the kill. I do know some coaches keep track of opportunities to get the dig and would track digs and missed opportunities. But that is not an official stat.
