Why do they play on Sundays? Is this a travel issue? Is it for the opposing teams to have more time on the island? Is it just to make it harder for coaches to turn in their rankings on time?

Simple. They don't schedule volleyball games at the same time as UH football games as the fans may overlap. Last night was the UH football homecoming game. (They blew out Idaho BTW.) The Wahine played Friday and today because of it.
ETA - Usually they play Thursday/Friday matches when there's a football game. I'm not really sure why that didn't happen this week. I would guess there was some sort of scheduling issue.

Sunday is family picnic at the beach day in Hawaii. Every Sunday. From 10 AM till dusk (and even later). Boy, those days at the Ala Moana Beach Park were great times! It's hard to tear yourself away from a Sunday family picnic to watch volleyball at the SSC.

I knwo here at UF we have lots of Homecoming themed events all for a few days before the game, maybe thats why the volleyball match was put a day after the football game?

If you went to Ala Moana at 10am on a Sunday for a family picnic, chances are you were driving around the park till dusk (and even later) looking for a parking space.

I've read in the paper a few times that it was a staffing issue for the athletic dept -- they don't have enough people to staff aloha stadium and the stan sherrif if the games are played simultaneously.
