This is kindof a weird question, but if you wanted to could you kick the ball on a serve? I know you can kick the ball normally during play, but is that true on a serve as well?

Nope. One hand or one arm is the rule.

RULE 13 The Service
Section 1. The Service Definition ARTICLE 1. The service is the act of putting the ball into play by the player in position No. 1 who hits the ball with one hand (open or closed) or any part of one arm in an effort to direct the ball into the opponent’s team court from the service zone.
I suppose it would be legal to strike the ball with an elbow.

It is interesting, however, that this is not more clearly stipulated under service faults.

I believe the beach volleyball rules were amended tospecifically state that you had to toss the ball in the air before serving,; can't serve directly out of the hand. Since this rule says hit with one hand does that eliminate the hold with one hand and strike with th other while the ballstill rests in one hand serve? i presume so. Seen some mean spinners, although also takes away the grandma "undeerhand" serve from 6th graders.

The ball is also supposed to be contacted within 8 seconds of the service signal, but I don't really see that being enforced (sort of like rotation errors for players moving before the service).

I always quick kick the serve over off a very low quick bounce during camps when showing various trick serves. I actually tried it once in a rec league and the ref thought I served it underhand and I got away with it. My proof that some officials are just clueless.

What would the hand signal from the ref be if something like that occurs?

Illegal serve is extend arm, lift with palm up from level of leg to chest height -- or something like that. You can also hold your nose.

Not discriptive enuff. It would be like when you stub your toes on the ground. The referee would hop, grimacing, holding toes.
Hey, I thought you were leaving for the day?

That's the catchall signal for an illegal serve. I think the same signal is used for a foot fault or if the server contacts the ball outside of the service area.
17. Illegal service or ball not released at time of service. Lift the extended arm (palm up) from the level of the leg to the level of the chest.
