a neat story.
I'm not all that familiar with sitting volleyball, so I did a quick web search.
it appears that the key rules distinction is that:
(though other descriptions use the term "bottom", and define it as "the upper part of the body, from shoulder to one’s buttocks.")
though I believe brief loss of floor contact is allowed on defensive plays (i.e. lunging to the side to make a dig or something)

I did a session with my team last year, had some Pickleball nets so I had them play sitting volleyball. They were exhausted and much more appreciative of what it took to play the game well. Their butts hurt a bit but their upper body fatigue was where they were surprised. And the game is super fast.
