How good are the Chinese? Very very good. May and Walsh lost last time they played them, but they played very very bad. If they play well they can potentially beat anyone and they are on fire right now.

The lefty is quite good and the other girl looks like a Chinese Walsh.

If I was playing them I would serve the primary blocker, i think the lefty is harder to read and moves the ball around a little better.

Pick your poison with the Chinese. The blocker (Xue) isn't as crafty as her partner (Xi), but can pound the ball and is hitting something like .650 for the tournament. Xi is also a very good attacker. The Chinese are experienced - twelve world tour wins and a bronze medal - can serve the hell out the ball, and Xue is huge at the net. Their ball control and digging is competent, but not great. Neither are they the quickest team out there.
The Chinese aren't unbeatable by any means - they've won three events this year, but they've also had some questionable losses. Regardless, a huge test for Misty/Kerri, I think the toughest match they'll see from any team in the Olympics. My heart says USA, my head says China in three. I'd be happy to be proven wrong.
