IMO this is not a 2023-specific problem.  I feel like this is a perennial issue for Texas

my best guess for why they do this is they feel overconfident because the team they're playing isn't on their level so they play down, it's only when they start losing do they really turn it on. If you look at their record from this year, you can see that they came ready to play against all the ranked teams (aside from Stanford who they got swept by)
