She is not. She is serving a mission in the Seattle area until the summer of 2021. Well depending on the coronavirus situation in Wash, that may not happen? Though it may be better for her to sit out a year since they're not going to be as dangerous as they were this fall. Well, she entered the MTC on February 5, and I believe she would have gone to Washington two weeks later. The coronavirus has had a significant effect on the missionaries worldwide (most are returning to their home countries, and some are being released early, depending on how much time they had left and any health concerns), but from what I can gather, missionaries from the U.S. who are serving in U.S. missions (i.e. the case with Gneiting) will continue to serve. I'm sure precautions are being taken (e.g. following the guidelines of the federal, state and local governments). I don't know her personally, so I couldn't say exactly what is going on in her particular situation (her Instagram hasn't been updated since she entered the MTC), but I'm guessing she's still a missionary. Another possibility is that she may have been/could be reassigned to a different part of the country that has fewer cases than Washington does.

Heather Olmstead did an interview with BYUSN about how the she and the team are dealing with the current situation. She also mentioned that she's been watching Better Call Saul, so it's nice to see that she has excellent taste in television.

This tweet was a bit cryptic, but the above interview seems to indicate that what they're doing is re-watching and providing commentary on the August 2018 win over Stanford. Ordinarily, I'm not a huge fan of living on past glories that aren't championship wins (I was heartened that Olmstead admitted that she doesn't go back and watch replays--I assume she means broadcasts, as she certainly must watch film--as she's focused on the future). And I'm especially not a huge fan of living on past regular season glories. However, I think the case can be made that this was the most important regular season win in the history of BYU women's volleyball. It propelled them to the top of the polls for much of the season, and while the Elite 8 win over Texas was certainly more important, without this win, BYU probably isn't a regional host, and if they don't host, there's a decent chance they don't make it to the Final Four.
So with all that said, if they're going to revisit a regular season win, this is probably the best one. I would be more interested in seeing them revisit some of the major postseason wins, though. In addition to the aforementioned win over Texas to get to the Final Four in 2018 (particularly RJP's superhuman performance), it would be nice for them to get Shawn Olmstead and the 2014 team together to revisit the wins over Nebraska and Texas.
Edit: Apparently, there will be a documentary on the entire 2018 season airing at 11AM MT on BYU TV on Friday. I'm not sure if this is what they were talking about in the interview (they were talking specifically about the August Stanford match) or if it's in addition to that.

Tomorrow (Friday) at 9am AZ time, BYU will show highlights of the 2018 Stanford win. I hear Mary Lake and Coach Heather will be commentating. Then at 10am is a look back at the 2018 run to the Final Four.

Yes, it starts at 10 AM MT. Kennedy Eschenberg will also be commenting with Lake and Olmstead. It looks like the documentary at 11 is a full hour.
The team's Twitter account also posted a clip from the documentary that is focused on the Sweet 16 match against Florida.

So I watched both the replay with running commentary and the documentary. The replay was honestly not worth watching except for maybe the most die-hard BYU fans. To no surprise, Mary Lake was the highlight. Heather Olmstead is a great coach, but she is not a great quote (as a former reporter, sometimes you get lucky and the coach is a great quote, but this is fairly uncommon, so you have to find someone else like Lake to pick up the slack). Kennedy Eschenberg was quiet enough that I forgot she was there at times. And the less said about Spencer Linton, the better. At least it wasn't Jarom Jordan. The documentary was much better. They had quotes from a lot of the members of the team and coaching staff, as well as some other people associated with the athletic department (unfortunately, Jarom Jordan made a few appearances). They talked about their preparation for the season, the Stanford and Utah wins (they completely skipped over the USC and Marquette wins, which was weird, as those were instrumental to their rise to the top of the polls), many of the WCC wins, McKenna Miller's injury, the loss to LMU, and most of the tournament run (sans Stony Brook, but that's understandable). It wasn't perfect (some of the non-volleyball people commenting didn't seem to know a whole lot about volleyball, and there were some minor factual errors), but I did enjoy it. I was having a hard time finding the on-demand video link for the documentary, but the team helpfully posted it on Twitter. It's here.
