stanford cardinal refers to their color I believe, and Louisville's mascot is the cardinal bird Y is your mascot a tree leftcoaster is correct. The tree is part of the LSJU Marching Band. It's not the official mascot. (Stanford's fight song isn't official either. They have an official one but that's not the one that is usually played.) It's a reference to El Palo Alto (The Tall Tree) that's in the Stanford logo and Palo Alto's city seal.
Here's an old Stanford logo, which is very similar to Palo Alto's seal.

Officially, Stanford doesn't have a mascot. The tree is the mascot for the band. The "Tree" is effectively the unofficial mascot of Stanford University and it is representative of El Palo Alto, the tree that appears on both the official seal of the University and the municipal seal of Palo Alto, Stanford's nearby city. Some ask, "Is El Palo Alto a real tree and is it still alive and where is it located?" The answer is yes, it is a real tree and it is still alive (last I heard), and it is located near the Stanford Shopping Center close to where Alma Avenue intersects El Camino Real. Here's a picture of the tree approximately 100 years ago: The tree is over 1,000 years old and the train tracks you see in the picture are now used daily by Cal Train to move passengers from San Jose to San Francisco.
