You get five calendar years from the time you enroll to participate in four seasons. (note: even if you enroll in spring and your season doesn't end by the end of year 5, you can finish out that season)
That's the normal thing that every NCAA athlete has from the git go.
"Redshirt" just means you (voluntarily) did not participate in one season within any of those five years. Typically it has been used to refer to not participating as a (true) freshman. You don't have to apply or be given approval to do it. It's just automatic. As previously noted, "participation" means you were on the court for a single serve. *poof* You just lost the ability to redshirt for that season.
"Medical redshirt" is really an incorrect term that shouldn't be used. The more proper term is "medical hardship waiver". A hardship waiver has to be applied for and approved. It means that that season doesn't count for you, and your clock extends one year from five years to six. As noted, you have to be below a threshold of 30% of games/matches (rounded in a reasonable way), and those have to be only at the beginning of the season. You can't come back at any later point in time. (there are other various types of hardships recognized as well, beyond season-ending injury)

So, the 2020 "spring 2021" COVID season doesn't count, and fall 2021 season was a medical hardship. That means she should have a full four years of eligibility remaining, 2022 through 2025. Correct. All enrolled Fall 2020 athletes essentially received a hardship waiver "for free" for the 2020-21 athletic year, regardless if they played in a season or not.
Yeah, having the tandem of Landfair and Wucherer on the left for potentially three more years after this season is a pretty solid foundation of offense for MN's future. It remains to be seen whether or not Taylor will use her Covid year, however.

I assume another way to word what you said here is "It remains to be seen if she will decide to turn pro after the 2024 college season."
