Both Wisconsin and Penn State have on-campus dairy operations that make ice cream, cheese, and other novelties.
Established in 1865, the Berkey Creamery first operated out of the College Barns, alongside a blacksmith and a hayloft. It moved to its own standalone facility in 1889, and in 1892 began offering short courses in dairy processing. By 1904, a Dairy Manufacturing major was established at Penn State, and the creamery opened retail sales & delivery of pasteurized milk and cream. Today the creamery processes more than three million pounds of milk a year and serves as a research facility for the Department of Food Science.
Babcock Dairy got its start in 1887, when chemist Stephen Babcock arrived in Madison to continue his research into the chemical composition of dairy products. He created the Babcock Butterfat Test, a practical and inexpensive procedure that dairy farmers use to maintain the consistency of their products. Eager to share his insights with students, in 1890 he renovated a clapboard house on campus into a classroom using scavenged materials, and began teaching his own short courses on dairy processing. In 1892, the university moved Babcock into a new building, Hiram Smith Hall, which became the nation’s first permanent dairy building. With the help of inventions like the batch freezer and churn machines in the 1920s, the department was able to establish commercial ice cream production on campus. In the 1950s, the department moved into the newly built Babcock Hall, where it still operates today.
